Ralph Carroll’s Favorite Chili
Serves 4
1½ pounds (24 ounces) 90% lean ground beef
4 tablespoons Olde Westport Championship Chili Spice Blend® (see Olde Bill's Comments for more cooking directions from Ralph Carroll)
2 (16 ounce) cans Bush’s Chili Beans® (mild or hot), undrained
1 (8 ounce) can tomato sauce (1 cup)
1 cup V-8 Vegetable Juice® (regular or spicy-hot)
In a 4 heavy 4 quart saucepan, cook ground beef over medium-high heat until no pink in meat. Remove saucepan from heat, stir in Olde Westport Championship Chili Spice Blend®. Return to heat, add chili beans, tomato and V8 juice (I used spicy-hot, excellent choice). Bring to a gentle boil, stirring often. Lower heat, cover, simmer for 15 minutes, stirring occasionally.
Olde Bill’s Comments: Mr. Carroll is a 30 year plus user of Olde Westport Championship Chili Spice Blend®. He shared this recipe with me and gave his permission to share with you. He loves his chili with a little more zip than his wife but he always had her taste the chili after he gradually added the 4 tablespoons Olde Westport Championship Chili Spice Blend® to the pot. When she said it was just fine, he stopped. When she left the kitchen, he dumped in an additional 2 tablespoons (6 tablespoon total in recipe), and he said she never complained. Do you honestly think he was fooling her? I doubt it.
