Miss Lil's Garlic With Chicken
Serves 4
- 3 1/2 pound frying chicken, cut up
- 10 cloves garlic, peeled and quartered
- 1/4 cup dry vermouth
- 1/4 cup vegetable oil
- 4 ribs celery, coarsely chopped
- 1/2 teaspoon crushed red pepper
- 2 tablespoons Westport Spice Antonio's Italian Spice Blend
- Place chicken, skin side up (or may use 4-6 ounce boneless, skinless chicken breast halves), in baking dish.
- Combine remaining ingredients in bowl. Pour marinade over top of chicken.
- Cover with foil and let sit 1 hour to marinate at room temperature or can be done the night before and refrigerated.
- Bake in a 350-degree oven for 45 minutes (add 15 minutes if refrigerated overnight).
- Remove foil and bake 15 minutes longer.
