Miss Lil's Garlic With Chicken

Serves 4

  • 3 1/2 pound frying chicken, cut up
  • 10 cloves garlic, peeled and quartered
  • 1/4 cup dry vermouth
  • 1/4 cup vegetable oil
  • 4 ribs celery, coarsely chopped
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons Westport Spice Antonio's Italian Spice Blend
  1. Place chicken, skin side up (or may use 4-6 ounce boneless, skinless chicken breast halves), in baking dish.
  2. Combine remaining ingredients in bowl. Pour marinade over top of chicken.
  3. Cover with foil and let sit 1 hour to marinate at room temperature or can be done the night before and refrigerated.
  4. Bake in a 350-degree oven for 45 minutes (add 15 minutes if refrigerated overnight).
  5. Remove foil and bake 15 minutes longer.
