Chili For A Crowd

Serves 16

2 tablespoon vegetable oil
2 medium onions, chopped (3 cups)
5 pounds 90% lean ground beef
1 (2.5 ounce) pkg. Olde Westport Championship Chili Spice Blend, (½ cup from 20 oz. Refill Bag)
2 (15 ounce) cans Hunt’s Seasoned Tomato Sauce For Chili
2 (15 ounce) cans chili beans, undrained
1 (15 ounce) can black beans, drained and rinsed (can use pinto or red beans)
2 (10 ounce) cans diced tomatoes with green chilies (mild or regular)
1 (7.75 ounce) can ElPato Mexican Tomato Sauce (Walmart)
1 (32 ounce) carton chicken stock
1 teaspoon salt, or to taste

Heat oil in a six-quart stock pot, add onion, stir and cook until translucent. Add beef, stir and cook just until no pinkness in meat. Stir in Olde Westport Championship Chili Spice Blend. Add tomato sauce, beans and tomatoes with green chilies, stir. Stir in chicken stock, bring to a gentle boil, cover, lower heat and simmer for 30 minutes, stirring occasionally to prevent sticking. Add salt to taste and serve.
