Zesty Take on Cordon Bleu

Need to feed eight people? Our delicious meatloaf cordon bleu recipe is sure to please! Any leftover meatloaf makes a great second meal or sandwiches for the brown bagger in your family.

Zesty Meatloaf Cordon Bleu

2 pounds 93% lean ground beef 1 cup Italian seasoned bread crumbs 1 small onion, chopped 2 large eggs, beaten 2 tablespoons Olde Westport Garden Harvest Special Blend 4 ounces thinly sliced smoked ham (Hormel Cure 81 preferable) 4 ounces (1 cup) shredded Monterey Jack Cheese with jalapeno peppers, sliced

In a medium bowl, mix together the ground beef, bread crumbs, eggs, onion and Olde Westport Garden Harvest Special Blend with a fork. Spread the beef outonto a piece of waxed paper, and press out with fingers to 1/2 inch thick (8x10 inches). Arrange slices of ham and cheese over top. Starting with the 8 inch edge, roll the beef up into a log removing the waxed paper as you go. Seal ends and seam with fingers, place into a 9x13 inch baking dish. Bake for 60 minutes or just until beef is no longer pink in center when checked with a knife (don't overcook).
