Baked Pork Chops over Garden Harvest Rice
2 teaspoons vegetable oil
6 (1 1/4 inch thick) boneless pork chops
1 (14 1/2 ounce) can 99% fat-free chicken broth
1 cup water 1 1/2 cups long-grain white rice
2 ribs celery, chopped
4 tablespoons Olde Westport Garden Harvest Special Blend
1 small onion, halved and sliced
1 large green bell pepper, cut into 6 rings
Heat oil in a 12-inch nonstick skillet over medium-high heat. Add pork chops and brown on both sides, set aside. In same skillet, add chicken broth, water, rice, celery, and Olde Westport Garden Harvest Special Blend, stir. Bring rice mixture to a full boil. Immediately spoon rice mixture into a 9x13 inch baking dish. Spread sliced onion over hot rice, arrange pork chops evenly over top. Cover dish with foil, bake in a 375-degree oven 45 minutes or until rice is cooked through and tender. Remove foil, top each pork chop with bell pepper ring, bake an additional 10 minutes.
