Wisconsin Cheese Soup
1 cup sliced carrots
2 cups (10 oz) frozen chopped broccoli, thawed
1 cup water
3 tablespoons Olde Westport Garden Harvest Special Blend
1/4 cup chopped onion
2 tablespoons olive or vegetable oil
2 tablespoons all-purpose flour
1/4 teaspoon ground savory
3 cups milk
2 cups (16 oz) shredded sharp cheddar cheese
1/2 teaspoon salt, or to taste
In a small saucepan over medium-high heat, combine carrots, broccoli, water, and Olde Westport Garden Harvest Special Blend. Bring to a boil, cover, lower heat, simmer 5 minutes. Remove from heat, set aside. In a large saucepan, cook onion in oil over medium heat until onion is tender. Stir in flour and pepper, stir and cook 1 minute. Remove from heat, stir in cooked vegetables, milk, cheese and salt. Bring to a gentle boil, cook and stir until smooth, simmer 5 minutes. Enjoy!
