Winter is upon us, and most of us have several months left of chilly weather. What better way to thaw out from the ice and snow than a delicious chicken breast dinner featuring one of our most popular spices? This recipe is a family favorite, and it typically serves four.

Chicken Breasts with Provolone Sauce Over Rice

½ cup flour 3 tablespoons Olde Westport Garden Harvest Special Blend, divided 4 boneless, skinless chicken breast halves 3 tablespoons vegetable oil 4 ounces thinly sliced ham from deli 1 cup dry white wine (use cooking wine or your favorite) 1 (12 ounce) can evaporated milk (regular or low-fat) 8 ounces (2 cups) shredded Provolone cheese 2 cups hot cooked rice

Combine flour and 1 tablespoon Olde Westport Garden Harvest Special Blend in a shallow dish. Dredge chicken breast in flour. Reserve 2 tablespoons flour. Heat oil in skillet and brown chicken well on both sides, remove to platter. Top each chicken breast with equal amounts of sliced ham. Meanwhile, in same skillet over low heat, add 2 tablespoons reserved flour into pan drippings, stirring until smooth. Slowly stir in white wine, evaporated milk and remaining 2 tablespoons Olde Westport Garden Harvest Special Blend. Stir over medium heat just until thickened. Add cheese, lower heat and stir until melted and smooth, don’t boil. Place equal amounts hot cooked rice on individual plates. Top with chicken breast and spoon cheese sauce over tops. Enjoy!
