Verde Version of Pork and Beans

Yum! We always get asked for the recipe after serving this meal. It serves eight people. Enjoy!

Pork Chile Verde with Beans

1 tablespoon vegetable oil 2 pounds boneless pork roast, cut into bite-sized pieces 1 large onion, chopped (2 cups) 1 (14 1/2 ounce) can diced tomatoes with green chiles 1 (8 ounce) jar LaVictoria mild green taco sauce (1 cup) 2 (4 ounce) cans chopped green chiles (1 cup) 2 garlic cloves, minced 4 tablespoons Olde Westport Chile Verde Mix (from 2.75 or 22 ounce package) 1 (16 ounce) can navy beans, rinsed and drained 1 (15 ounce) can black beans, rinsed and drained 1 (15 ounce) can chile with beans, undrained (mild or hot)

Heat oil in a heavy 4 quart saucepan, add pork, cook until well browned on all sides, stirring often. Add onion, cook until tender. Add tomatoes with green chiles, green taco sauce, garlic and Olde Westport Chile Verde Mix, stir. Bring mixture to a gentle boil, cover, lower heat, simmer for 10 minutes. Add all beans, simmer an additional 20 minutes or until heated through.
