Unique Pizza with Mexican Twist

This delicious pizza recipe incorporates our Mesa Flats Enchilada Spice Blend and potatoes for a unique take on the traditionally Italian dish. Omit tomato sauce and add a 10 ounce can of diced tomatoes with green chiles for a slightly spicier version to this recipe.

Skillet Enchilada Potato Pizza

2 tablespoons butter 1 tablespoon vegetable oil 5 medium potatoes peeled cut into thin slices 1 small onion, chopped (1 cup) 12 ounces 90% lean ground beef 4 tablespoons Olde Westport Mesa Flats Enchilada Spice Blend 1 (8 ounce) can tomato sauce (1 cup) 2 cups (8 ounces) shredded mozzarella cheese

Heat butter and oil over medium heat in 12-inch heavy skillet. Arrange potatoes on bottom of skillet, sprinkle onion over top. Cover skillet, cook 5 minutes, lower heat, cook an additional 15 minutes. Do not turn potatoes or uncover skillet. Meanwhile, in a 10 inch skillet, cook ground beef, add Olde Westport Mesa Flats Enchilada Spice Blend and tomato sauce, stir. Spoon chili over potatoes, sprinkle cheese on top, cover and cook 5 to 8 minutes longer or until cheese is melted. This serves 6. Enjoy!
