Traditional Recipe with a Twist

Even though the holidays are over, our sense of nostalgia for the delicious dishes we pass around the dining room table never goes away. That's why we're introducing this recipe, Southwestern Sweet Potatoes, given a unique kick with our Olde Westport Chile Verde Mix.

Southwestern Sweet Potatoes

Serves 8

2 4-ounce cans diced mild green chiles (1 cup)
2 tablespoons water
2 tablespoons Olde Westport Chile Verde Mix (from 2.75 or 22-ounce package)
3 medium sweet potatoes, peeled, halved lengthwise, sliced crosswise (about 2 pounds)
2 cups (8 ounces) shredded Mexiblend cheese

In a small bowl, add green chiles, water and Olde Westport Chile Verde Mix. Lightly oil in a 7x11 inch baking dish, spread one-third each potatoes, green chile, and cheese over bottom. Repeat layers two times, ending with cheese. Cover with foil, bake in a 350-degree oven for 30 minutes or until potatoes are tender. Enjoy!
