Texas Two-Step Beef Enchiladas

This two-step recipe will delight your tastebuds! Enchiladas are an excellent dish to serve when it's chilly out. The Mesa Flats Enchilada Spice Blend was specially made to add some zest to your enchiladas. Enjoy!

Texas Two-Step Beef Enchiladas (Serves 6) 16 ounces 93% lean ground beef 1 large onion, chopped 1 green or red bell pepper, chopped 1/4 cup Olde Westport Mesa Flats Enchilada Spice Blend 1 1/4 cups water 1 (10 ounce) can RoTel tomatoes and green chiles 1 (8 ounce) can tomato sauce 3 tablespoons Olde Westport Mesa Flats Enchilada Spice

Blend 6 (10 inch) flour tortillas 8 ounces (2 cups) shredded sharp Cheddar cheese Step 1: Brown ground beef over medium-high heat, drain. Add onion and bell pepper, cook until tender. Stir in 1/4 cup Olde Westport Mesa Flats Enchilada Spice Blend and water, cook 2 minutes, remove from heat and set aside, keep warm. Step 2: In a saucepan over medium heat, add tomatoes and green chiles, tomato sauce and 3 tablespoons Olde Westport Mesa Flats Enchilada Spice Blend, stir until smooth. Bring mixture to a boil, lower heat, cook until thickened to consistency of gravy. Lay tortillas out on a flat work surface, spoon equal amounts of meat mixture down center, roll up and place seam side down in a 9x13 inch baking dish. Spoon tomato sauce over top, sprinkle with cheese. Bake in a 350 degree oven for 25 minutes or until melted.
