Tex-Mex Pork Chops

Tex-Mex Pork Chops

Serves 4

4 thick boneless pork chops (5 ounces each, trimmed weight)
1 tablespoon fresh lime juice
2 tablespoons fresh chopped cilantro
2 large red bell peppers
10 ounce package frozen corn, thawed
2 green onions, chopped
2 tablespoons + 1 teaspoon Olde Westport Championship Chili Spice Mix

Trim all visible fat from pork chops, squeeze lime juice evenly over tops, sprinkle with cilantro. Slice peppers in half lengthwise, remove seeds and veins, set aside. In a small bowl, blend corn, onions and 2 tablespoons Olde Westport Championship Chili Spice Mix. Spoon corn mixture into pepper halves. Place pork chop over top of each pepper, flip over and place chops in a 9x13 inch baking dish (chops on bottom). Sprinkle remaining Olde Westport Championship Chili Spice Mix over all. Cover dish with foil, bake in 350-degree oven 30 minutes. Remove foil, bake an additional 15 minutes or until chops are cooked through when checked with a knife.
