Spicy Ginger Chicken

Spicy Chicken Ginger

Serves 4

4 chicken breast halves, boneless, skinless
1/2 cup all-purpose white cup flour
2 tablespoons vegetable oil
3 green onions, 1 inch slices
1 green bell pepper, cut into 2 x 1/4 inch strips
1 red bell pepper, cut into 2 x 1/4 inch strips
8 ounce can pineapple chunks, undrained
1 cup prepared Olde Westport Border Bandito's Salsa
1 teaspoon ground ginger

Dredge chicken in flour. Heat oil in skillet and brown chicken on both sides, set aside. Add green onions and pepper strips to pan drippings, saute 2 minutes. Add pineapple chunks along with juice, Olde Westport Border Bandito's Salsa and ginger to skillet. Cook 2 minutes over medium heat until peppers are crisp-tender and sauce is thickened, stirring occasionally. Return chicken to skillet covering with peppers and basting juices over top. Cover and simmer 15 minutes or until chicken is cooked through and tender, basting occasionally. Enjoy!
