Special Shrimp Louie

Shrimp Louie

Serves 4

1 (12 ounce) package pasta (any style), cooked to package instructions
1/2 cup butter (one stick)
4 tablespoons extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper
3 green onions, finely chopped
1 small red bell pepper, cut in 2 inch thin strips
1 (16 ounce) paclage frozen peeled and cleaned shrimp
2 teaspoons or more Olde Westport Gold Coast Garlic Shake
4 tablespoons Romano cheese

Cook pasta to package directions in 4 quarts boiling salted water, drain well in a colander and place in a large bowl. Meanwhile, in a small heavy sauce pan over low heat, melt butter. Add olive oil, salt, black pepper, onion and bell pepper, stir. Cook until onion is transoarent. Add shrimp and cook just until pink.Spoon shrimp mixture along with Olde Westport Gold Coast Garlic Shake (to taste) over pasta and toss to coat. Toss again before placing on individual plates. Let each guest sprinkle Romano cheese and extra Olde Westport Gold Coast Garlic Shake over top.

Olde Bill's Comments: An excellent subsitution for the shrimp is sea scallops. Use your favorite seafood or just cook without any. Anyway you prepare this dish it will be  treat. I often use a pasta called farfalle for this recipe. It looks like a mini bow tie and holds the sauce in all the little crevices. It is avaliable in any major supermarket.
