Southwestern Chicken Spaghetti

Southwestern Chicken Spaghetti

Serves 4 

8 ounces uncooked spaghetti
1 tablespoon vegetable oil
3 boneless skinless chicken breast halves, cut into thin strips
1 15-ounce can tomato sauce
1 14.5-ounce can diced tomatoes with green chiles
4 tablespoons Olde Westport Chile Verde Mix
1 11-ounce can whole kernel corn, drained
2 4-ounce cans diced mild green chiles

 Cook spaghetti to package directions, drain. Meanwhile, heat oil in a large skillet over medium-high heat. Add chicken strips, cook until lightly browned and no pinkness in meat. Add remaining ingredients, bring to a gentle boil, cover, lower heat, simmer 15 minutes, stirring occasionally. Stir in spaghetti, cook 2 minutes to heat through, serve. Enjoy!
