Slow down with this slow-cooked pork stew

Slow-Cooked Southwestern Pork Stew

Serves 4

1 1/2 pounds boneless pork roast, trimmed and cut into 1-inch cubes
1 tablespoon cooking oil
4 medium unpeeled potatoes, cut into 1-inch pieces (4 cups)
1 large onion, coarsely chopped
1 green bell pepper, cut into 1/2 inch pieces
14 1/2 ounce can diced tomatoes with green chiles
16 ounce jar La Victoria Green Taco Sauce (1 1/2 cups)
2 cloves garlic, minced
2 tablespoons + 1 teaspoon Olde Westport Border Bandito's Salsa Spice Blend
6 flour tortillas

In a large skillet, over medium-high heat, brown pork on all sides in hot oil. In a large crockpot, combine pork and all ingredients except tortillas. Cook on low 8 to 9 hours. Serve with warmed tortillas.
