Salsa Arroz Con Pollo

Salsa Arroz Con Pollo

Serves 6

1 cup long-grain white rice (converted or parboiled)
11-oz can Mexicorn (corn, red & green bell peppers)
14.5-oz can fat-free chicken broth
14.5-oz can diced tomatoes with green chiles
15-oz can black beans, drained and rinsed
4 tablespoons flour
2 tablespoons Olde Westport Championship Chili Spice Mix
6 boneless skinless chicken breast halves

Mix rice, corn, broth, tomatoes and beans in a 9x13-inch baking dish. In a shallow dish, blend flour and 1 tablespoon Olde Westport Championship Chili Spice Mix. Dredge chicken in flour mixture, arrange each piece over rice mixture, sprinkle with remaining Olde Westport Championship Chili Spice Mix. Cover dish with foil, bake in a 375-degree oven 30 minutes. Remove foil, bake an additional 10 minutes or until all liquid is absorbed by rice and chicken cooked through. Enjoy!
