New Spin on Traditional Meatloaf

Add a little Italiano to your menu with our Super Italian Meatloaf recipe! The steps are extensive but the hard work is worth it in the end. This is a great option for having guests over or being able to save some for leftovers, because it serves 6. Enjoy!

Super Italian Meatloaf 3 large eggs, beaten 1 cup crushed crackers 1 (12 ounce) container small curd cottage cheese 6 tablespoons Antonio's Italian Spice Blend, divided 2 pounds 90% lean ground beef 1 (15 ounce) can tomato sauce 3 tablespoons brown sugar 3 tablespoons Parmesan cheese

Beat eggs in a large bowl. Add crackers, cottage cheese and 4 table-spoons Antonio's Italian Spice Blend, mix thoroughly. Add ground beef, being careful not to over mix. Shape into a loaf with indentation on top. Place in baking dish, elevated so all grease will drain away while baking. Bake at 350 degrees for 30 minutes. Meanwhile, in a small sauce pan, add tomato sauce, remaining 2 tablespoons Antonio's Italian Spice Blend, brown sugar and Parmesan cheese. Bring to boil over medium heat, stirring until thickened. Lower heat and simmer 5 minutes, uncovered. Remove meat loaf from oven and transfer to a small baking dish. Pour 1/2 tomato sauce over top keeping as much as possible in indentation. Return to oven and bake an additional 30 minutes or until cooked through, being careful not to over cook. Remove and let sit 5 minutes to firm up for slicing. Place remaining sauce on table for spooning over top of each individual slice.
