As we head toward the holidays, keep this tasty soup recipe in your arsenal. It is guaranteed to warm you up during the chilly days of December!
Miss Lil's Pasta and Navy Bean Soup
2 (16 ounce) cans navy beans, drained and rinsed
1 cup small shell pasta
2 medium red onions, coarse chopped
2 cloves garlic, crushed and minced
1 (14 1/2 ounce) can diced and peeled tomatoes
2 (14 1/2 ounce) can fat free chicken broth
1 cup water
4 tablespoons Antonio's Italian Spice Blend
2 tablespoons chopped parsley
Combine all the ingredients except parsley in a 3-quart saucepan. Stir. Bring to a gentle boil over medium heat. Lower heat, cover, simmer for 25 minutes or until pasta is cooked through, but not mushy, stirring occasionally. Stir in parsley and cook an additional 5 minutes. Olde Bill's Tip: To give this soup a different flavor, I'll add 4 ounces of Cure 81 ham. Even though the ham is added, the fat grams and calories remain low. Very nice addition!
