Mexican Meatball Soup
1 tablespoon vegetable oil
1 medium onion, chopped (1.5 cups)
2 large cloves garlic, finely chopped
2 14.5-ounce cans beef broth
14.5-ounce can of stewed tomatoes
3 tablespoons Olde Westport Border Bandito's Salsa Spice Blend
2 tablespoons chopped cilantro (optional)
16 ounces 93% lean ground beef
1/4 cup long-grain white rice, uncooked
4-ounce can mild green chiles drained
1/4 cup fat-free egg substitute, beaten (equal to 1 large egg)
2 green onions, chopped
Heat oil in a 4-quart soup pot, cook onion and garlic until tender. Stir in beef broth, tomatoes, 2 tablespoons Olde Westport Border Bandito's Salsa Spice Blend and cilantro. Bring to boil over medium heat stirring occasionally. Lower heat and simmer. Meanwhile, blend ground beef, rice, green chiles, 1 tablespoon Olde Westport Border Bandito's Salsa Spice Blend and egg in a bowl. Form into 1 inch diameter meatballs, gently drop into simmering soup, one at a time, stirring to keep meatballs separated and being careful not to break up. Bring to a boil, cover, simmer 3o minutes, stirring occasionally. Ladle into bowls, sprinkle with green onions.
