Mexican Cheesy Corn Dip

This Mexican Cheesy Corn Dip serves a crowd and is a terrific, hearty starter to a Mexican fiesta with friends.

  • 2 (8 ounce) packages cream cheese
  • 2 (10 ounce) cans Rotel Diced Tomatoes With Green Chiles
  • 2 (11 ounce) cans whole kernel corn, drained
  • 4 tablespoons Olde Westport Championship Chili Spice Blend
  • 1 (4 ounce) can diced green chiles (optional)

Cut cream cheese into small cubes. Mix all ingredients in large microwave-safe bowl and microwave on high for 1 minute, or until cream cheese is soft enough to blend, stirring occasionally. Serve warm or refrigerate until thoroughly chilled.
