Hearty Corn Chowder with a Verde Twist

Our recipe for Hearty Chicken & Green Chile Corn Chowder is a tasty twist on a traditional recipe. Adding the chicken and green chile spices things up a bit! This recipe serves 6, and we guarantee that you won't be able to keep our corn chowder to yourself.

Hearty Chicken & Green Chile Corn Chowder 1 tablespoon vegetable oil 3 boneless skinless chicken breast halves (about 18 ounces) cut into bite-size pieces 1 small onion, chopped (1 cup) 1 red bell pepper, diced (1 cup) 4 tablespoons Olde Westport Chile Verde Mix (from 2.75 or 22 ounce package) 1 (14 1/2 ounce) can chicken broth 1 (12 ounce) can evaporated milk (1 1/2 cups) 1 (15 ounce can) cream-style corn 2 (4 ounce) cans mild diced green chiles (1 cup)

Heat oil in a 4-quart saucepan over medium heat. Add chicken, cook 5 minutes. Add onion and bell pepper, cook 1 minute. Stir in Olde Westport Chile Verde Mix until smooth. Add remaining ingredients, stir. Bring to a gentle boil, stirring often. Cover saucepan, lower heat, simmer for 15 minutes or until vegetables are tender and chicken cooked through. Enjoy!
