Fun Rice Recipe for Mexican Food Lovers

This recipe is extensive, but we promise it's worth it!! Enjoy it with our Olde Westport Border Bandito's Salsa Spice Blend, and make sure to check out the rest of our spices on this website. This recipe serves six.

Chicken & Mexi-Rice Bowl

1 1/2 cups water 14 1/2 ounce can diced tomatoes with green chiles 2 tablespoons Olde Westport Border Bandito's Salsa Spice Blend 3/4 cup long-grain white rice (converted or parboiled) 2 tablespoons fresh chopped cilantro, or to taste (optional) 11 ounce can Meixcorn (corn, red and green bell peppers), drained 15 ounce can pinto beans, drained, don't rinse 2 13-ounce cans chopped boneless skinless chicken breast meat, drained 4 ounces (1 cup) shredded Mexi-blend cheese

In a 3-quart saucepan over medium-high heat, add water, diced tomatoes with green chiles, Olde Westport Border Bandito's Salsa Spice Blend, rice, cilantro, corn and beans. Bring rice mixture to a boil, cover, lower heat, simmer 12 minutes or just until a small amount of liquid remains. Add chicken to rice, stir, cook an additional two minutes. Remove from heat and let sit until all liquid is absorbed by rice. Spoon equal amounts of rice mixture into 4 medium size bowls, sprinkle each with cheese and serve.
