One Dish Italian Casserole
4 thick cut boneless pork chops, cut in half lengthwise
1 tablespoon vegetable oil
8 ounces Italian sausage, sliced 1/2 inch thick (mild or hot)
1 large onion, chopped (2 cups)
4 medium potatoes, peeled and tick sliced
2 (14 1/2 ounce) cans stewed tomatoes (regular or Italian)
2 tablespoons Romano cheese (Parmesan)
1/2 teaspoon coarse ground black pepper
4 tablespoons Antonio's Italian Spice Blend
8 ounces shredded Mozzarella Cheese
Trim all visible fat from pork chops and brown well on both sides in vegetable oil over medium high heat. Place pork chops in a 9x13 inch baking dish. In same skillet, lightly brown Italian sausage, drain. Add onion and potatoes to sausage, cook 2 minutes. Spoon sausage mixture over top of pork chops. In same skillet, add stewed tomatoes, Romano cheese, pepper and Antonio's Italian Spice Blend. Bring to a boil over medium heat. Spoon tomato mixture over sausage mixture in baking dish. Sprinkle Mozzarella cheese over top. Place uncovered dish in a 350 degree oven for 60 minutes or until bubbly and cheese lightly browned on top.
