Easy Chicken-Tortilla Enchilada Bake

Easy Chicken-Tortilla Enchilada Bake

Serves 6

1 10.75-oz can Campbell's 98% fat-free Cream of Chicken Soup
1/2 cup Olde Westport Mesa Flats Enchilada Spice Blend
2 soup cans of water
1 14.5-oz can diced tomatoes with green chiles
2 4-oz cans mild diced green chiles
6 8-inch flour tortillas
2 13-oz cans chicken breast meat, drained
1.5 cups (6 oz's) shredded Cheddar cheese (Monterey Jack with Jalapeno)

In a 3-quart saucepan, add cream of chicken soup and Olde Westport Mesa Flats Enchilada Spice Blend, stir until smooth. Stir in water, diced tomatoes and green chiles. Bring mixture to a gentle boil over medium-high heat, lower heat, simmer 5 minutes. Arrange 2 flour tortillas over bottom of a 9x13 inch baking dish. Spread one-third each of chicken, enchilada sauce and cheese evenly over top, repeat twice. Bake in a 350-degree oven for 30 minutes or until bubbly around edge and cheese is melted. Enjoy!
