Double good recipe

Casseroles are another great back-to-school dinner. Cheesy broccoli and rice casserole is a tasty way to incorporate those not-so-popular vegetables into a yummy meal! This recipe serves 6.

Double Good Cheesy Broccoli & Rice Casserole

3/4 cup white and wild rice with garden vegetables or long-grain white rice 1 1/2 cups water 2 tablespoons Olde Westport Garden Harvest Special Blend 1 (10 3/4 ounce) can broccoli cheese soup 1/2 cup milk 1 (16 ounce) package frozen broccoli pieces, thawed

Add rice, water and Olde Westport Garden Harvest Special Blend into a 2-quart sauce pan. Bring to a boil over medium-high heat, lower heat, cover, simmer 15 minutes or just until a small amount of liquid remains. Remove from heat, let sit 5 minutes or until remaining liquid is absorbed by rice. Meanwhile, in a medium bowl, combine soup, milk and broccoli. Fold in hot cooked rice. Lightly oil a 7x11 inch baking dish. Spoon broccoli mixture into dish, cover with foil, bake in a 350 degree oven for 30 mins or until bubbly around edges.
