Delicious Poudre Beef & Chile Casserole

Poudre Canyon Beef and Green Chile Casserole

  • 1 pound 90% lean ground beef
  • 1 small onion, chopped (1 cup)
  • 2 cloves garlic, minced
  • 1 (10 3/4 ounce) Campbell's Southwestern Verde soup
  • 1 (16 ounce) can cream-style corn
  • 2 (4 ounce) cans diced green chilies
  • 1 (10 ounce) can RoTel Dice Tomatoes with Green Chiles
  • 4 tablespoons Olde Westport Mesa Flats Enchilada Spice Blend
  • 12 ounces corn tortilla chips, crushed
  • 2 cups shredded cheddar cheese

In a large skillet over medium high heat, brown beef with onion and garlic and drain grease. Add soup, corn, and green chilies and mix well. Layer meat mixture, tortilla chips, and enchilada sauce in a 3-quart baking dish. Top with cheese. Bake for 30 minutes.
