Filet of Beef in Mushroom Sauce
2 tablespoons vegetable oil
6 6-ounce beef filets, well-trimmed
1 tablespoon flour
1 14.5-ounce can of beef broth
2 tablespoons Olde Westport Spice Cattleman's Choice Beef Sauce Blend
8 ounces fresh mushrooms, sliced
1 clove garlic, finely minced
1/4 cup of dry sherry
1/4 teaspoon black pepper
1 large bay leaf
Heat 2 tablespoons oil in a large skillet. Brown filets well on both sides, set aside. Add flour to skillet stirring until smooth and slightly browned. Remove from heat and slowly add beef broth to flour mixture, stirring. Return to heat, add remaining ingredients and stir until thickened. Lower heat and simmer 5 minutes, uncovered. Return filets along with any juices to skillet. Spoon sauce over top, cover skillet, cook filets to desired doneness. Remove filets to individual serving dish, remove bay leaf, spoon sauce over top.
