Creamy Corn Casserole from Olde Westport Spice

Creamy Corn Casserole

Serves 6

1/2 (18.4 ounce) package Olde Westport Buttermilk Cornbread Mix® (9 ounces)
2 (14.75 ounce) cans creamed corn
1 cup (8 ounces) real mayonnaise (no substitutes please)
2 teaspoons sugar
1 teaspoon salt
1/2 cup water

Preheat oven to 375 degrees, lightly oil a 7x11 inch baking dish. In a medium bowl, combine Olde Westport Buttermilk Cornbread Mix®, creamed corn, mayonnaise, sugar, salt and water. Spoon mixture into prepared baking dish. Bake for 40 to 45 minutes or just until the top is golden brown. Remove from oven, cool 5 minutes to firm up before serving with spoon (dish will be creamy and not like cornbread).

Olde Bill's Comments: For a large gathering, this recipe can easily be doubled by using all of the Olde Westport Buttermilk Cornbread Mix® and doubling the remaining ingredients. Baked in a oiled 9x13 inch baking dish with a little added cooking time, just until golden brown. Add a 4 ounce can diced green chiles for a Southwestern flavor.
