Corn Maq-what?!

Have you ever heard of Corn Maquechoux? It is pronounced "mock shoe", and is a staple in Louisiana. The dish is similar to a succotash. This meal comes from our Cajun recipe book, which you can purchase online at Corn Maquechoux is a Cajun take on a traditionally Native American dish. Enjoy!

Corn Maquechoux (Serves 6)

2 teaspoons vegetable oil 1 small onion, chopped (1 cup) 1 small green bell pepper, chopped (1 cup) 2 (15 ounce) cans whole kernel corn, drained 1 (14 1/2 ounce) can petite diced tomatoes, well drained 2 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend, or to taste

In a 2-quart saucepan, heat oil over medium-high heat. Add onion and bell pepper, cook until tender. Add corn, drained tomatoes and Olde Westport Sizzlin' Sunset Cajun Spice Blend, stir. Cover saucepan, lower heat, simmer 5 minutes or until heated through.
