Colorado Good Morning Breakfast Potato Casserole

Wake up with a delicious breakfast casserole using the Colorado Green Chile Sauce recipe from our previous blog post.

Colorado Good Morning Breakfast Potato Casserole

Serves 8

3 cups frozen Ore Ida Potatoes O'Brien potatoes (12 ounces from 28 ounce package)
1 1/2 cups Colorado Green Chile Sauce
1 1/2 cups cubed ham (or 16 ounces of cooked breakfast sausage)
4 large eggs
1/2 cup milk
1 1/2 cups (6 ounces) shredded Mexican Blend Cheese (Monterey Jack, Cheddar, Queso Quesadilla and Asadero Cheese), shredded cheese of choice

Heat oven to 400 degrees. Spread frozen potatoes over bottom of an oiled 9x13 inch baking dish, bake for 15 minutes. Remove from oven, spoon Colorado Green Chile Sauce over top of potatoes, spread ham evenly over potatoes. In a small bowl, beat eggs, add milk, stir until blended. Pour egg mixture over ham. Lower oven temperature to 350 degrees, bake an additional 15 minutes or just until eggs set (do not over cook). Sprinkle cheese over top, bake an additional 5 minutes or just until cheese is melted. Cut into 8 pieces and serve.
