Chicken & Rice Roll Ups

Keep warm this winter with our Chicken & Rice Roll Ups recipe. You will need to have our Olde Westport Mesa Flats Enchilada Spice Blend on hand in order to fix this dish!

Chicken & Rice Roll Ups

Serves 4

3/4 cup long-grain white rice
2 teaspoons oil
4 boneless, skinless chicken breasts (about 1 1/4 pounds)
1 small onion, finely chopped
1 green or red bell pepper, finely chopped
1 14.5-ounce can Mexican stewed tomatoes
1 10.75-ounce can 98% fat-free tomato or Nacho cheese soup
1 soup can of water
1/4 cup Olde Westport Mesa Flats Enchilada Spice Blend
4 10-inch flour tortillas
4 ounces reduced-fat shredded Monterey Jack cheese

Prepare rice to package directions. Meanwhile, heat oil in a nonstick skillet over medium-high heat. Add chicken, cook until lightly browned on both sides. Remove chicken, cool, cut into small bite-size pieces. In same skillet, add onion & bell pepper, cook until tender, add chicken, cook 2 minutes. Stir chicken-onion mixture into rice, set aside. Meanwhile, add stewed tomatoes, soup, water and Olde Westport Mesa Flats Enchilada Spice Blend into a 2-quart saucepan, bring mixture to a gentle boil, stirring continuously. Lay flour tortillas out on a work surface, spoon equal amounts of chicken-rice mixture down center, roll up, place seam side down on individual plates. Ladle sauce over top & sprinkle with cheese.
