Chicken Fideo

This delicious recipe incorporating our special Antonio's Italian Spice Blend is sure to please! Enjoy.

Chicken Fideo

  • 4 boneless skinless chicken breast halves
  • 1 teaspoon vegetable oil
  • 1 link Italian sausage
  • 1 medium onion, chopped (1 1/2 cups)
  • 1 medium green bell pepper, chopped (1 1/2 cups)
  • 1/4 teaspoon coarse ground black pepper
  • 1 (14 1/2 ounce) can peeled and cut tomatoes, undrained
  • 1 (14 1/2 ounce) can beef broth
  • 4 tablespoons Antonio's Italian Spice Blend
  • 1 (12 ounce) package uncooked fideo pasta (pasta that is twirled together)
  • 2 ounces (1/2 cup) reduced-fat shredded Cheddar cheese

Cut chicken lengthwise into thin strips. Heat oil in a large nonstick skillet over medium high heat. Add chicken and cook until browned on all sides. Remove casing from sausage and cut into thin pieces. Add to skillet and cook 2 minutes, stirring often. Add onions and bell pepper, cook until crisp-tender. Stir in black pepper, tomatoes, beef broth and Antonio's Italian Spice Blend. Bring to a boil, stirring continuously until thickened. Lower heat and simmer for 5 minutes. Prepare pasta to package directions using no oil or salt, drain well. Arrange pasta in a 9x13-inch baking dish. Spoon chicken mixture over top and bake, uncovered, in a 350-degree oven for 20 minutes. Sprinkle cheese over top and bake an additional 7 minutes.
