Chicken Enchilada and Rice Skillet Dinner

Chicken Enchilada and Rice Skillet Dinner

1 cup long grain white rice 2 cups water 2 tablespoons vegetable oil 12 (6 inch) corn tortillas, cut into small bite size pieces 2 (13 ounce) cans cooked chicken breast meat, drained 1 (14 1/2 ounce) cans diced tomatoes with green chiles 1 (15 ounce) can tomato sauce 3 tablespoons Olde Westport Mesa Flats Enchilada Spice Blend

Add rice and water into a 2-quart saucepan, bring to a gentle boil, cover, lower heat, simmer 12 minutes or until most of water is absorbed by rice. Remove from heat and let sit. Meanwhile, heat oil in a large skillet over medium-high heat. Add tortilla pieces, stir and cook until crisp, add chicken, cook 2 minutes. Add both cans tomatoes and Olde Westport Mesa Flats Enchilada Spice Blend to tortilla-chicken mixture, stir. Bring to a gentle boil, stirring occasionally, lower heat, cook 2 minutes. Serve over hot cooked rice.
