Cajun Take on Fish Recipe

Stuffed flounder isn't your typical Thursday-night dinner, but with our Sizzlin' Sunset Cajun Spice Blend and shrimp it is a delicious and unique meal to spice up your meal routine. This recipe serves six. Enjoy!

Stuffed Flounder

1 small onion, finely chopped 1 rib celery, finely chopped 4 tablespoons butter 1 large egg, well beaten 1/4 cup dry sherry 3 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend, divided 1 cup of cleaned and shelled shrimp, cut into small bite-size pieces 1 (6 1/2 ounce) can crab meat, well-drained 1 1/2 cups 1/4-inch cubed dried bread crumbs 6 large fresh flounder fillets, pat dry 2 teaspoons lemon juice

In a large skillet, saute onion and celery in butter until tender, remove skillet from heat. Mix egg, sherry, and 2 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend in a bowl. Add to onion in skillet. Add shrimp and crab meat to onions, toss to coat. Return skillet to heat and cook only until shrimp turns pink. Stir in enough bread crumbs (may need additional) to make dressing of desired consistency. Spread stuffing on 1/2 of each flounder fillet, fold in half and secure with wooden picks. Place flounder fillets in w ell-buttered baking dish. Top with remaining stuffing. Sprinkle lemon juice and shake remaining Olde Westport Sizzlin' Sunset Cajun Spice Blend over tops of flounder. Place in a 375-degree oven for 30-40 minutes or until founder is cooked through.
