Cajun Chicken with Rice
Cajun Chicken over Rice
Serves 6
1 tablespoon vegetable oil
4 boneless skinless chicken breast halves, cut into bite size pieces
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 rib celery, finely chopped
3 cloves garlic, crushed and finely chopped
1 15-ounce can tomato sauce
1 14.5-ounce can petite diced tomatoes
2 teaspoons Worcestershire Sauce
1 to 2 teaspoons hot pepper sauce
1 cup (regular or low-fat) sour cream (not fat-free)
Heat oil in a large nonstick skillet over medium-high heat. Add cubed chicken and cook until lightly browned on all sides. Add onion, bell pepper, celery and garlic, cook until tender. Add tomato sauce, cut tomatoes, Olde Westport Sizzlin' Sunset Cajun Spice Blend, Worcestershire sauce and hot pepper sauce, stir well. Bring mixture to a gentle boil, lower heat and simmer for 15 minutes. 
Cook seasoned rice to package directions. Stir rice and sour cream into sauce mixture and cook an additional 5 minutes, don't boil, stir occasionally.
