Cajun Chicken Cacciatore
1 tablespoon vegetable oil
4 boneless skinless chicken breast halves, cut into bite size pieces
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 rib celery, finely chopped
3 cloves garlic, crushed and finely chopped
1 15-ounce can tomato sauce
1 14.5-ounce can petite diced tomatoes
3 to 4 teaspoons Olde Westport Sizzlin' Sunset Cajun Spice Blend
2 teaspoons Worcestershire Sauce
1 to 2 teaspoons hot pepper sauce
1 cup (regular or low-fat) sour cream (not fat-free)
1 12-ounce package fettuccine pasta, cooked to package directions
Heat oil in a large nonstick skillet over medium-high heat. Add cubed chicken and cook until lightly browned on all sides. Add onion, bell pepper, celery and garlic, cook until tender. Add tomato sauce, cut tomatoes, Olde Westport Sizzlin' Sunset Cajun Spice Blend, Worcestershire sauce and hot pepper sauce, stir well. Bring mixture to a gentle boil, lower heat and simmer for 15 minutes. Cook pasta to package directions using no oil or salt, drain well. Stir pasta and sour cream into sauce mixture and cook an additional 5 minutes, don't boil, stir occasionally.
