Back to school crockpot recipe

Now that it's finally time to put away the pool toys and bring out the backpacks, the days are busier and dinner sneaks up on us. Low-maintenance, simple crockpot recipes are the perfect dish for this time of year! We took this soup recipe from saucepan to crockpot to kick off the school year!

Green Chile Refried Bean Soup

Serves 6

1 (16 ounce) can fat-free refried beans 1 (15 ounce) can black beans, drained and rinsed 1 (2.75 ounce) package Olde Westport Chile Verde Mix (1/2 cup from 22 ounce pckg) 1 (14 1/2 ounce) can chicken broth (99% fat-free or regular) 1 (11 ounce) can whole kernel corn, drained 2 (4 ounce) cans of chopped mild green chiles 1 (13 ounce) can cooked chicken breast meat, drained 1/2 cup water 1 cup (4 ounces) shredded cheddar cheese 30 corn tortilla chips, divided  

In a crock pot, combine all ingredients except tortilla chips. Cook on Low all day or until meal has a soup-like consistency. When ready to eat, add cheese, stir until melted. Ladle into bowls, crumble tortilla chips equally over top.
