Another Great Special Blend Recipe

This fantastic recipe combines chicken and shrimp in a perfect dish for summer. The ingredient list is extensive, but we promise you, it's worth it in the end! Serves 6. Enjoy!

Shrimp & Chicken Perleau

6 cups water 2 large bay leaves 3 pounds cut up chicken parts (legs, thighs, and breast) 6 green onions, chopped 3 cloves garlic, minced 1 tablespoon vegetable oil 1 1/2 cups uncooked rice 1 (14 1/2 ounce) can low-fat chicken broth 1 (14 1/2 ounce) can stewed tomatoes 1/2 cup real bacon bits 4 tablespoons Olde Westport Garden Harvest Special Blend 1 tablespoon Worcestershire sauce 1 teaspoon dried thyme 1/2 teaspoon salt, or to taste 1/2 teaspoon fresh ground black pepper 1 pound medium shrimp, shelled

In a large ovenproof Dutch oven (cast iron pot) bring 6 cups water and bay leaves to a boil. Add chicken, return to a boil, lower heat, simmer until chicken cooked through and tender. Remove chicken, cool, remove meat from bones and cut into bite-size pieces. Meanwhile, saute onions, bell pepper and garlic in Dutch oven with oil until crisp-tender. Stir in rice, saute 2 minutes longer. Add chicken broth, stewed tomatoes, bacon bits, Olde Westport Garden Harvest Special Blend, Worcestershire sauce, thyme, salt and pepper. Bring to boil, add chicken, cover, bake in a 350-degree oven 30 minutes. Stir in shrimp, cover pot, bake an additional 10 minutes or until rice has absorbed liquid and shrimp is pink.
