Julie's Green Chile Cheese Bake

Serves 8

4 (4 ounce) cans diced green chiles (2 cups), divided
1 (16 ounce) package shredded Mexiblend cheese, divided
4 large eggs
1 (12 ounce) can evaporated milk
4 tablespoons Olde Westport Chili Verde Mix (from 2.75 or 22-ounce package)
1 (2.8 ounce) can French's French Fried Onions (previously Durkees)

Lightly oil a 9x13 inch baking dish. Add 2 cans green chiles, spread evenly over bottom, sprinkle top with half of the cheese, repeat layer. In a medium bowl, beat the eggs, stir in remaining ingredients, pour over the chile-cheese. Bake in a 350 degree oven for 45 minutes or until egg is set in middle. Remove from oven, let sit 5 minutes to firm up for slicing. Enjoy!
