Simple Cowboy Stew

Serves 6


16 ounces 90% lean ground beef
1 small yellow onion, chopped (1 cup)
2 (4 ounce) cans diced green chilies
4 tablespoons Olde Westport Chili Verde Mix® (from 2.75 ounce or 22 ounce package)
1 (15 ounce) can chili beans (mild or hot), undrained
1 (14½ ounce) can hominy (yellow or white), undrained
1 (14½ ounce) can diced tomatoes with green chiles (or stewed tomatoes for less heat)


Cook the ground beef in a 4 quart saucepan over medium-high heat just until no pinkness in meat, drain. Add onion, cook until tender. Add remaining ingredients, stir. Bring mixture to a gentle boil, cover, lower heat and simmer for 15 minutes, stirring occasionally.
