Cheesy Pepper-Jack Hamburger Goulash
1 pound 90% lean hamburger (or 8 ounces hamburger & 8 ounces breakfast sausage)
1 (15 ounce) can tomato sauce
2 (10 ounce) cans diced tomatoes with mild green chilies
1 (8 ounce) box elbow macaroni
4 tablespoons Olde Westport Mesa Flats Enchilada Spice Blend®
8 ounces (2 cups) shredded pepper jack cheese
Brown hamburger in large skillet. While hamburger is browning, cook macaroni per package directions, usually 5 to 7 minutes. Add tomato sauce, tomatoes to hamburger. Drain macaroni, stir into hamburger along with Olde Westport Mesa Flats Enchilada Spice Blend®. Bring to a gentle boil, lower heat, simmer uncovered for 10 minutes. Stir in cheese, cook just until melted. Serve with a salad and garlic toast.
