Cheesy Chipotle Corn Chowder

Chipotle Corn Chowder

Serves 4

Ingredients:


1 (14½ ounce) can fat-free chicken broth
2 (15 ounce) cans cream-style corn
1 (4 ounce) can mild diced green chiles (½ cup)
2 tablespoons Olde Westport Prairie Fire Chipotle Pepper Blend®
½ cup milk (regular or 2%)
8 ounces Velveeta® cheese, cubed (regular or Jalapeno)
2 tablespoons chopped cilantro

Directions:

In a 3 quart saucepan, add chicken broth, corn, green chiles, Olde Westport Prairie Fire Chipotle Pepper Blend® and milk, stir. Bring to a gentle boil over medium heat, stirring often. Lower heat, cover, simmer 5 minutes. Add cheese, stirring until melted. Stir in cilantro, cook 5 minutes, serve.
