Highland Ranch Pinto Beans
4 (16 ounce) cans pinto beans (drain 2 cans only, don’t rinse)
4 tablespoons Olde Westport Chile Verde Mix® (from 2.75 or 22 ounce package)
1 (14½ ounce) can chicken broth (fat-free or regular)
1 smoked ham hock (2 cups chopped smoked ham or sausage)
1 cup finely chopped onion
1 (14.5 ounce) can dice tomatoes with green chiles
Add all ingredients into a 3 quart saucepan, stir. Bring to a gentle boil over medium-high heat. Lower heat, cover, simmer for 20 minutes, stirring occasionally.
