Panhandler's Dinner Stew


Serves 4

Ingredients:

2 teaspoons vegetable oil
16 ounces trimmed lean sirloin steak, cut into ¾ inch cubes
1 large onion, coarsely chopped (2 cups)
2 parsnips, cut into bite size pieces (can omit and add extra potatoes)
2 medium potatoes, peeled and cubed
2 (14½ ounce) cans beef broth
2 tablespoons + 1 teaspoon Olde Westport Prairie Fire Chipotle Pepper Blend®
2 medium carrots, thick sliced
2 ribs celery, sliced
3 tablespoons flour
4 tablespoons water
1 teaspoon salt, or to taste

Directions:

Heat oil in a large nonstick skillet over medium-high heat. Add steak, cook until well browned. Add onion, parsnips and potatoes, cook until crisp-tender. Stir in beef broth, 2 tablespoons Olde Westport Prairie Fire Chipotle Pepper Blend®, carrots and celery. Bring mixture to a gentle boil, lower heat, simmer 25 minutes or until carrots are tender, stirring occasionally. In a small bowl, blend flour and water, stir into stew, stirring continuously until thickened. Stir in remaining 1 teaspoon Olde Westport Prairie Fire Chipotle Pepper Blend® (more if desired), salt to taste, cook an additional 5 minutes, serve.
