Hearty Texas Black Bean Soup
3 (15 ounce) cans black beans, drained and rinsed
1 (14½ ounce) can Mexican stewed tomatoes
1 (14½ ounce) can diced tomatoes with green chiles
1 (14½ ounce) can chicken broth (regular or low-fat)
1 (11 ounce) can Mexicorn® (corn, red and green bell peppers), drained
2 (4 ounce) can chopped mild green chiles
3 tablespoons Olde Westport Championship Chili Spice Blend®
Combine all ingredients in a 4 quart saucepan, bring to a gentle boil over medium heat. Lower heat, cover, simmer for 30 minutes, stirring occasionally.
