Spicy Grilled Pimento Cheese Sandwich with Avocado and Bacon
2 slices bacon, cooked, drained and cut into bite-size pieces
1 avocado, pitted, peeled, sliced lengthwise
2 slices bread, your choice as to type
1 tablespoon butter
2 tablespoons Spicy Pimento Cheese Spread, or to taste (see recipe on this web site, Spicy Pimento Cheese Spread)
In a large skillet, cook bacon to desired doneness, drain on paper towel, wipe skillet clean. Spread Spicy Pimento Cheese Spread (see recipe) over both slices of bread. Top one slice with chopped bacon and sliced avocado, top with remaining slice of bread. Butter both outer sides of bread, cook in skillet on both sides until lightly browned.
