2 teaspoons vegetable oil
1 small onion, chopped (1 cup)
1 small green bell pepper, chopped (1 cup)
2 (15 ounce) cans whole kernel corn, drained
1 (14½ ounce) can diced tomatoes, well drained
2 teaspoons Olde Westport Sizzlin’ Sunset Cajun Spice Blend, or to taste
In a 2 quart saucepan, heat oil over medium-high heat. Add onion and bell pepper, cook until tender. Add corn, drained tomatoes and Olde Westport Sizzlin’ Sunset Cajun Spice Blend, stir. Cover saucepan, lower heat, simmer 5 minutes or until heated through.
