Hearty Beef Enchilada Soup

Serves 6

2 pounds 90% lean ground beef
1 small onion, chopped )1 cup)
1 (28 ounce) can RoTel® Diced Tomatoes With Green Chiles©
1 (4 ounce) can diced green chiles
2 (15 ounce) cans chili beans, undrained (your favorite brand)
1 (2.25 ounce) package Olde Westport® Mesa Flats Enchilada Spice Blend©  (½ cup, rounded)
1 (15 ounce) can corn, drained
1 cup shredded Cheddar cheese

Cook ground beef and onion in a 6 quart stock pot until no pink in meat. Add remaining ingredients, stir. Bring to gentle boil over medium-high heat, stirring often. Lower heat, cover, simmer for 30 minutes, stirring often.
